Project Description: Buffalo Public Schools (BPS) is building a new, state-of-the-art central commissary at 1016 East Delevan Avenue to replace their outdated facility, focusing on fresh, locally sourced ingredients using cook-chill methods to significantly improve student meal quality and nutrition, with plans for community use of a test kitchen and training spaces.
Purpose: Prepare and distribute healthier, fresher meals for over 27,000 daily student meals, moving away from processed foods.
Technology: Implement modern cook-chill technology for better freshness and variety.
Local Sourcing: Support farm-to-table initiatives, accepting more New York-grown products.
Community Asset: Include a test kitchen and multipurpose room for community meetings and staff training.
