Hot Breakfast Buffet Service – Winter Training & Spring Practice 2026

Overview

Utah State Football is soliciting proposals for a hot breakfast buffet service to support our student-athletes during the 2026 winter training and spring practice period. The selected vendor will be responsible for delivering, setting up, and maintaining the buffet on-site for all scheduled dates. Each meal must be fully set up by the assigned start time and remain available through the full service window.

Dates and times are subject to change based on the football calendar. Additional dates may be added, and some dates may be removed as needed.

Eligibility Requirement
Ultimate preference will be given to vendors with:

  • Demonstrated success supporting NCAA Division I football programs through breakfast buffet service.
  • Familiarity with Utah State Football’s operational routines and nutritional protocols as of January 2025.

Final vendor selection will be made in consultation with the Director of Football Operations, based on overall fit, reliability, and operational continuity.

Daily Menu Requirements
Each breakfast must contain at least 8 oz of protein per head and include:

  • Seasonal Fresh Fruit Display (Gluten-Free, Vegan)
  • Scrambled Eggs (Gluten-Free, Dairy-Free, Vegetarian)

    • Fresh only – no powdered or bulk egg mix
    • Served with salsa, hot sauce, ketchup, and shredded cheese on the side
  • Sausage (Gluten-Free, Dairy-Free)
  • Crisp Bacon (Gluten-Free, Dairy-Free)
  • Hashbrowns (Vegetarian)

    • Rotate style: shredded, cubed, or skillet
  • Juice and Water

    • Rotate juice types (orange, apple, cranberry) or offer variety
  • Rotating Carbohydrate Options

    • Weekly rotating breakfast breads (muffins, bagels, pastries)
    • Oatmeal bar with toppings such as fresh berries, sliced banana, dried fruit, honey, brown sugar, cinnamon, chopped nuts, seeds (chia/flax), and individually portioned nut butters

Staffing Requirement
Vendor must provide on-site attendant(s) daily to:

  • Set up and maintain the buffet
  • Keep all items stocked, fresh, and safe
  • Ensure cleanliness and food safety
  • Break down and clean up after service

Contingency Planning
Vendor must maintain a documented contingency plan to ensure uninterrupted service in the event of staffing shortages, equipment failure, vehicle issues, or facility disruption.
Utah State Football must be notified immediately of any disruption that could affect scheduled service.

Service window: 7:00 AM – 9:30 AM

(Times subject to change; head counts will be provided 24-48 hours before service)
Dates are subject to change. Additional days may be added or removed as needed based on the football calendar.

Notes

  • Dates may be adjusted based on winter training modifications, spring practice scheduling, weather, or facility changes.
  • Head counts will be provided prior to the start of service and updated as needed.

    • Head counts may range from 30-120
  • Vendor must scale service to match daily attendance and timing adjustments.
