SPECIAL INSTRUCTIONS AND SPECIFICATIONSBREAD, ROLLS AND RELATED PRODUCTS, FRESH1. PRODUCT CHARACTERISTICS: Bread – Each loaf should have a firmand tender brown colored crust (except Italian) have a fine andeven grain and impart a pleasing flavor and aroma. Rolls andEnglish Muffins – After cooling, each baked unit should weighless than one-half pound. The individual rolls, except EnglishMuffins, should have a firm and tender crust (except that hardrolls will have a typical firm crisp crust) and have a fine andeven grain, impart a pleasing flavor and aroma, and be of theweight, size, shape, and variety specified. For English Muffins,the individual roll shall be round and approximately 1” inheight, and approximately 4” in diameter, griddled on top andbottom, and the weight, size, shape, and variety specified. Therolls should have a firm but tender crust, a porous, slightlychewy texture and a bland to slightly sour flavor. The deliveredproduct shall not be crushed or damaged. Fresh bread, includingindividual slices, shall not be more than 48 hours old uponarrival at receiving point, except whole wheat and rye, which maynot be more than 72 hours old. The volume of the bread shouldcontribute to a pleasing appearance.2. LABELING: Wrappers shall identify the type of product,ingredients, net weight, and name of bakery. The bakery must beregistered with the Pennsylvania Department of Agriculture andmust meet the Department’s standards for bakeries and bakeryproducts. Date and day of production must be clearly marked onlabel or by color-coded tie code (code to be supplied by vendor)on each package.3. PACKAGING: The products shall be packaged in accordance withcommercial practice. The package shall afford adequateprotection against deterioration and physical damage duringshipment.4. PRODUCT CONDITION AT DELIVERY: Bread, rolls and related productsmust be properly packaged and delivered in clean, sound, standardcartons or trays. Vendor shall indicate if cartons and trays arereturnable and if so, they are to be identified for return tovendor. The returnable containers shall be stored by the usingagency in a location easily accessible to the vendor and shall beremoved by the vendor on or before the next delivery. Productshall maintain freshness for a minimum of 5 days from date ofdelivery.5. QUANTITIES: Quantities listed are estimates only and may beincreased or decreased in accordance with the actualrequirements of the facility. The facility may cancel anyquantity of an order by providing notice at least 5 days priorto a scheduled delivery date, and will only pay the vendor forproducts actually accepted by the Department.6. DELIVERY DATES: Delivery must be made on dates as specified inthe contract. Vendors shall obtain prior approval for anyschedule changes from the Director of Dietary Services ordelivery may be rejected.7. AMOUNTS & PAYMENT OF COMMODITIES:Vendor shall indicate at the time of delivery any discrepanciesbetween actual net weight or count and the contracted amount andrecord the discrepancy on the delivery slips.
